A 7", 180 mm, Gyuto form Hitachi’s excellent Suminagashi Steel, 33 layers each side of stainbless damascus with a core of high carbon stainless steel. The handle is Snakewood (from N.E. South America) with a Buffalo Horn ferrule and a 50,000 year old Mammoth Ivory spacer.
This gyuto is an excellent all-round kitchen work horse.
